Happy National Cheese Fondue Day!!

Annually on 11th April will be observed as National Cheese Fondue Day.
Fondue is a Swiss melted cheese dish served in a communal pot over a portable stove heated with a candle or spirit lamp.
Let’s recap how cheese fondue has been created.

Back in 1699, there is a book published in Zurich named “Kass mit Wein zu kochen” with the meaning “to cook cheese with wine”. The book has been exposed how to grate or cut up cheese and melted and cook with wine. It also mentions that for bread to be dipped in it.
Years later, in 1875, the first known recipe for the Cheese Fondue has been created and presented as a Swiss national dish. After 3 decades, Cheese fondue texture becomes smoother and stable emulsion of the wine and cheese with the introduction of corn starch into the recipe.
With the slogan “La fondue cree la bonne humeur” with translation “fondue creates a good mood, fondue continued to be promoted aggressively in Switzerland. Meanwhile in 1981 in Germany, “Fondue isch guet und git e gueti Luune” or “fondue is good and creates a good mood” has been used for the slogan.
